Matcha, White Chocolate & Banana Brownies
The very first time I made brownies, it was an absolute
success and it tasted so so good. My friend, Yin-Kik and I weren’t even patient
enough to let the brownies cool completely before attacking them.
Some people prefer pure chocolate brownies with nothing
added to them because they believe brownies should be left alone to be just
chocolate and nothing else. On the other hand, I have a slight obsession with
adding banana to my brownies (it doesn’t help that bananas are so cheap at the
moment). The bananas make the brownies smells amazingly fragrant and also,
because it’s a fruit, I feel less guilty indulging in them.
In the past few months, I have lost count of the number of
times that I have made chocolate chip banana brownies and thought I should experiment
with other flavours. I tried looking up a recipe that combines matcha, white
chocolate and banana but couldn’t find any at all so, I had some fun in the
kitchen. With it being my first time making these brownies, it was a complete success! (the second time
worked out just as great too)
What is there not to love about the combination? The fact that it has matcha and banana, the brownies are healthy enough...right?
Ingredients
1 cup oil (vegetable or canola)
2 eggs
1 ½ cup brown sugar
½ cup white sugar
¼ salt
2 tsp vanilla extract
2 cups flour
2 tbsp matcha powder
½ - 1 cup mashed banana
275g white chocolate baking melts
¼ cup white chocolate chips (optional)
Instructions
- Preheat oven to 180 degrees.
- With an electric mixer; mix the sugars, eggs, oil, salt and vanilla extract until its mixed well.
- Then, add the flour, matcha powder, mashed banana and chocolate baking melts.
- With a spatula/wooden spoon, combine all the added ingredients and make sure it’s mixed well.
- Line a 9x13 pan with baking paper, then spread the brownie mixture into it. Make sure you smooth the top of the mixture with the spatula so that it bakes evenly.
- (optional) Sprinkle the chocolate chips on top of the mixture.
- Bake for 35 minutes or until a toothpick is inserted and comes out almost clean.
- Let it cool completely before cutting it up.
Notes
*The chocolate chips is optional because white chocolate is
already quite sweet but if you’re an absolutely sweet tooth, go right ahead.

The one thing that I have discovered about these brownies is
that they are too good to share. If you must share, share it with the ones you
love the most OR make sure they exchange some form of edible goods with you
that is at least on par with the brownies.
