Matcha Banana Bread
It's been nearly 8 months since I last blogged, I can't believe so much time has passed! >_< Yes, I have been a bit slack but this matcha banana bread recipe is going to totally make up for it.
In the past month, I have made several versions of The Baker Chick's banana bread and the general consensus at home was that the matcha version of it is the best one and I absolutely agree. Being me, I couldn't help but deviate from the recipe as usual but it's all good coz there are no complaints at home and my matcha banana bread is always demolished in under 24-48 hours (depending how many batches I make).

Ingredients:
1/3 cup vegetable or canola oil
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
2 tsp vanilla extract
1.5 tbsp matcha green tea powder
1 1/2 cups flour
1 tsp bicarb soda
1/2 tsp salt
1/2 cup sour cream (a heaping cup of it)
4 very ripe bananas, mashed (medium-large sized ones)

Notes:
*If you prefer, you can use butter instead of oil.
*You can opt to not use sour cream in the mixture but I wouldn't recommend it. In saying that, I ran out of sour cream once so I added extra bananas instead and it still worked out pretty well.
*I used a cake tin instead of a loaf pan because I still didn't know where mine is, both yields the same result.
*If you want a stronger matcha flavour, use 2 tbsp instead.
*What brand of matcha green tea powder do I use? Kenko Tea's, of course :)

- Preheat oven to 180 degrees Celsius. Grease or spray a 9 inch loaf pan, set aside.
- In a large bowl, whisk together the oil and sugars. Add the eggs, one at a time and vanilla and whisk until it becomes a smooth mixture.
- Add the bicarb soda, salt and matcha green tea powder into the mixture then gradually add the flour, stir to mix until just combined.
- Fold in the bananas and sour cream.
- Pour batter into prepared pan and bake for 60 minutes or until toothpick inserted into the middle comes out clean.
- Cool until warm before serving.
